Chicken with Vegetables and Stuffing

I love the smell of chicken cooking. I was playing one day trying to come up with a good recipe for a homecooked meal. I went out to my garden and gathered some vegetables. I picked some tomatoes, green beans, a small cabbage, dug up some potatoes and other vegetables. I brought them in the house. I washed a whole chicken and placed it in a pan. Now what can I do? I went through my cupboard to see what interesting things I had and found some stove top stuffing. Stuffing is always good with chicken, but I wanted something a little different.

I thought for a moment and then I got the idea to use the stuffing on top of the chicken. So I prepared the stuffing and let it cool slightly. I then loosen the skin on top of the whole chicken. I placed the stuffing under the chicken skin placing it on top of the breast and along the legs. I then placed some stuffing inside the chicken. I washed the vegetables and cut them up placing them around the chicken in the pan. I opened a can of chicken broth and poured it over the vegetables in the pan around the chicken.
I covered the pan with tin foil and placed it in a 350 oven.
I baked it for about 1 1/2 hours.
I then checked it and to my surprise the stuffing had puffed up and was juicy on top of the chicken. I removed the tin foil and let it cook for aother 20 minutes until everything was a golden brown.
This was one of the best tasting chicken dinners. The flavor from the stove top stuffing had cooked into the chicken and the vegetables.
